Eunice’s Corn Chowder

Thanks to Joni for sharing her mom’s famous corn chowder recipe.  I love this chowder: it is rich, creamy, and easy to make.

4 oz. bacon
1 small onion
2 cans creamed corn
3 c. hot water
1/2 stick butter
1 can evaporated milk
3 tsp. salt
2 tsp. flour
2 tsp. cornstarch

Chop bacon and saute.  Chop onion and add, cook until soft.  Add creamed corn and water.  Add diced potatoes.  After potatoes are cooked, add butter, milk, and seasonings.  Thicken with 4 heaping teaspoons of flour and cornstarch.
